Abstract

Chronic non-communicable diseases are one of the main global challenges in the health area, these conditions alter the composition of the gut microbiota, which is considered as a metabolic organ that has to be in an eubiotic status to promote a proper health status in the human organism. As a strategy to stimulate the achievement of this state, the consumption of probiotics and prebiotics is recommended; one of the difficulties when they are consumed is that, due to the conditions they go through in the gastrointestinal tract, the amount of both prebiotics and probiotics that reach the point of interest to be effective is minimized, because of this reason, an option to increase the effectiveness of this type of products is proposed a microencapsulation by ionic gelation whose barrier gives protection against digestive conditions to the matrix containing the vegetable Kale (brassica oleracea. Sabellica) which is currently being studied for its polyphenol content and its prebiotic potential. It is believed that the design of this microcapsule under the ionic gelation technique will be useful for the further elaboration of a possible symbiotic.
